Chicken fajitas are easy to make and perfect for iftaar time and packed with lean chicken, fresh peppers and homemde seasoning. Save this recipes for when you don't want too many dishes but need lots of food.
1kg chicken breast sliced in to strips
2 or 3 capsicums thinly sliced
1 onion thinly sliced
1 tablespoon chilli powder
1 tablespoon coriander powder
1 tablespoon paprika powder
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1 tablespoon lemon juice
1 tablespoon olive oil for cooking
In a large bowl combine chicken and other ingredients, Toss until chicken and vegetables are coated and set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
When sizzling, spread chicken strips and vegtables in as much of a single layer as you can. Wait until they brown underneath to move them. Saute' strips, regularly pausing so that they can get some color, until cooked through, about 6-8 minutes.
Sprinkle with a bit of chopped fresh cilantro and serve immediately. you can serve with tortillas.
