While the base recipe is only dates and nuts rolled in coconut, this recipe is totally customised, you can add nuts, seeds and spices of your own choice. for kids you can add chocolate chip as well.
Ingredients
1 cup Majdool dates
1/2 cup gluten free oats
1/2 cup pistachio
1/2 almonds
1/3 cup shredded coconut.
Method
First, remove the stones from dates using a knife and then soaking them in water to make them softer. If the dates are fresh and super soft, you can skip this step. Now add almonds, oats, pistachio in a food processor and ground them, then add dates into the food processor and blitz until getting a smooth consistency.
Once you get a thick, smooth, sticky paste, use your hand to scoop out about 1-2 tablespoon of the mixture into your hands and rolled them into small energy balls. Now rolled these balls in the shredded coconut and put them in a refrigerator for about 4-5 minutes.
