▢1 1/2 pounds butternut squash peeled and ¾ inch diced
â–¢1 pound Brussels sprouts, trimmed and halved
â–¢1/2 Capsicum( I used red and yellow Capsicums)
â–¢2 tablespoons + 1/4 cup olive oil divided
â–¢2 teaspoons Kosher salt divided
â–¢1 teaspoon coarsely ground black pepper divided
â–¢3 tablespoons dried cranberries or raisins
â–¢3-5 shallots/ or 1/2 red onion
â–¢6-8 cups arugula or mixed greens
â–¢1/2 cup walnut halves toasted
â–¢1/4 cup pumpkin 3
â–¢1/4 cup crumbled feta cheese (optional)
â–¢Balsamic vinaigrette dressing (optional
How To Make
Preheat oven to 425°F. Spray a large sheet pan with oil.
In a large bowl combine the brussels sprouts, butternut, onions, capsicums, olive oil, 1/2 tea spoon mixed herbs, 1/4 teaspoon salt and pepper and arrange the vegetables onto the baking sheet in a single layer.
Bake 40 minutes, or until the vegetables are roasted and tender. Build the salad by placing the rocket/kale, roasted vegetables in a bowl and layer on dried cranberries, pomegranate and feta cheese ( optional).
This roasted butternut squash salad can be served as a hearty and healthy meal on its own. Alternatively, it pairs wonderfully with grilled chicken or salmon, making for a satisfying and balanced dining experience."
