Ingredients
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 red onion, sliced
1 cup cherry tomatoes
1 can (15 oz) chickpeas, drained and rinsed
200g halloumi cheese, sliced
3 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
How to make
Preheat your oven to 200°C (400°F).
In a large mixing bowl, combine the sliced red and yellow bell peppers, zucchini, red onion, and cherry tomatoes.
Add the drained and rinsed chickpeas to the bowl with the veggies.
In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
Pour the olive oil mixture over the veggies and chickpeas, and toss until everything is evenly coated.
Transfer the veggies and chickpeas to a large roasting dish, spreading them out in an even layer.
Roast for 25 minutes, or until the vegetables are slightly browned and tender.
Toss together briefly and put the halloumi slices on top. Put it under the grill for 5-10 mins, or until the cheese is melting and browning (keep an eye on it).
