Salmon Fish Cake with Dill Sauce

Introducing our Salmon Fish Cakes with Dill Sauce - a delicious dish that combines the rich flavors of salmon and a zesty dill sauce. Not only do these fish cakes tantalize your taste buds, but they also serve as a delightful source of nutrients that contribute to strong and resilient bones. Dive into this savory delight, where taste meets health. These cakes are perfect as a main course or as an appetizer for any occasion.



Ingredients:

  • 2 cups cooked salmon, flaked

  • 1/2 cup breadcrumbs

  • 1/4 cup chopped fresh parsley

  • 1/4 cup finely chopped onion

  • 2 cloves garlic, minced

  • 1 teaspoon lemon zest

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon red pepper flakes (optional)

  • 1 eggs, beaten

  • Olive oil, for frying


Sauce:

1/2 cup plain dairy-free yogurt (we love plain Culina)

3 small cloves garlic, minced or pressed

2 Tbsp fresh dill (or sub half the amount dried dill)

1 healthy pinch sea salt

1 pinch cayenne pepper

1-2 Tbsp lemon juice

1 drizzle extra virgin olive oil



Instructions:

  1. In a large mixing bowl, combine the cooked salmon, breadcrumbs, chopped parsley, chopped onion, minced garlic, lemon zest, egg, salt, black pepper, and red pepper flakes (if using). Mix well to combine all the ingredients evenly.

  2. Shape the mixture into patties of your desired size. Place them on a baking sheet lined with parchment paper and refrigerate for about 30 minutes to firm up.

  3. Heat a non- stick skillet over medium heat and lightly coated with cooking spray. Cook for about 3-4 minutes on each side, or until they are golden brown and heated through.

  4. Served with a side of mixed greens or yoghurt based dipping sauce.

Sauce:

  1. In a small bowl, mix together yoghurt, chopped dill, spices and lemonjuice to make the sauce.
